Our Mushrooms

At Mellow Cogumelo, our journey into mushrooms started with a love for good food, fermentation, and sustainable living. Growing gourmet and medicinal varieties here in the Alentejo feels like a natural extension of everything we care about—flavor, nutrition, and working in harmony with nature.

Our small mushroom farm is set up inside our straw bale barn, where we do our best to create the right conditions for them to thrive. It hasn’t always been easy—maintaining the right humidity and temperature off-grid in this climate is a challenge—but through years of learning, experimenting, and sharing knowledge with other growers, we’ve made it work.

We focus on growing mushrooms that are full of flavor and can be enjoyed in all kinds of dishes. Whether grilled, roasted, sautéed, or used as a hearty ingredient in plant-based cooking, they bring something special to the table. As we grow, we ​will offer dried mushrooms and other mushroom-based products, making them even more accessible to those who love good food.

Sustainability is always on our minds. We use natural materials whenever possible and repurpose agricultural byproducts for growing, making sure we respect the land that gives us so much.

This is a Coral Tooth Fungus (Hericium coralloides), a highly branched edible mushroom with a seafood-like flavor. It is closely related to Lion's Mane (Hericium erinaceus) but is distinguished by its intricate, coral-like branching structure rather than a compact, shaggy appearance.

These are Oyster mushrooms (Pleurotus ostreatus), a popular edible fungus characterized by delicate flavor and a meaty texture. Oyster mushrooms are rich in protein, fiber, and antioxidants, and are frequently used in cooking to add flavor and nutrients to dishes.

Lion's Mane Mushroom

This is a Lion's Mane mushroom (Hericium erinaceus), also known as the bearded tooth or pom-pom mushroom. It is a popular edible and medicinal fungus characterized by its white, shaggy, spine-like structures.The mushroom is valued for its culinary use, often compared in taste to lobster or crab.

Golden Oyster Mushroom

These are Golden Oyster mushrooms (Pleurotus citrinopileatus), an edible species cultivated for its vibrant yellow color and mild, nutty flavor. The clusters typically feature bright yellow to daffodil yellow caps that become convex and wavy with age.

Pink Oyster Mushroom

Pink Oyster Mushroom

This is a vibrant cluster of Pink Oyster Mushrooms (Pleurotus djamor), known for their bright pink color. They are gourmet edible mushrooms that are often marketed as having a meaty texture and a slightly sweet, seafood-like flavor. These mushrooms are fast-growing and tropical. They lose their vibrant pink color when cooked, turning a light beige or grey tone.

Black Pearl King Oyster Mushroom

Black Pearl King Oyster Mushroom

The Black Pearl Oyster or Black Pearl King Oyster is a oyster mushroom (Pleurotus ostreatus) hybrid from Japan. It is the result of a cross between a European and an Asian Pleurotus ostreatus. It grows and looks much like Pleurotus eryngii (King Oyster) in the beginning as it matures it will look more like a Pleurotus ostreatus (Pearl Oyster)
